The Food Medic Sticky Toffee Protein Mini Muffins

Ingredients

  • 1 scoop (25g) of The Food Medic Sticky Toffee NWC Protein
  • ¼ cup (20g) of ground almonds
  • ¼ cup (25g) of coconut flour
  • 1 tbsp (14g) melted coconut oil
  • 1 Egg white
  • ½ tsp baking powder
  • 1 tsp vanilla essence
  • ¼ apple sauce
  • 1 Tbsp honey or agave nectar

 

Method

  1. Preheat the oven to 180
  2. Combine all ingredients in a bowl
  3. Grease or spray a muffin tin or silicone baking tray and pour the mixture in
  4. Bake for 12-15 minutes until cooked right through
  5. Remove from oven, allow to cool completely before frosting.
  6. To frost, simply combine ½ cup of greek yogurt with a TBSP of Vanilla Whey or casein protein and blend. Spread on top and add some chopped pecans!
